The classic stretch dough recipe

To make a light and airy stretch dough, you need the following ingredients:

  • wheat flour - 250 g;
  • sunflower oil - 2 tablespoons;
  • warm water - 150 ml;
  • salt - on the tip of a knife;
  • soda - on the tip of a knife.

The classic stretch dough should be elastic and at the same time very tender. There should be no lumps or rough texture. That is why it is recommended to follow the recipe exactly.

  1. Sift flour thoroughly.
  2. Heat water to 50 degrees and dissolve a pinch of salt in it.
  3. Pour salted water into a bowl of flour.
  4. Pour 2 tablespoons of vegetable oil and add baking soda.
  5. Knead the dough in a way convenient for you. The dough can be kneaded with a spatula, or simply by hand. Either way, the result should be a light textured dough that doesn't stick to your hands. For such a consistency, experienced chefs recommend beating the dough on a hard surface at least 50 times.
  6. Divide the dough into 3 balls, pack in containers and refrigerate.
  7. Let the dough rest for 2 hours. This is the trick of the stretch dough. If you start rolling out the dough right after cooking, it will tear and stick.
  8. Before baking, the dough is laid out on the table and allowed to warm up (at least 30 minutes).
  9. After the dough is ready, it must be carefully pulled out. This is the difficulty for most novice cooks. To do this, we immerse our hands in flour and begin to gently stretch the cake from the middle to the edges, twisting the dough around its axis. Then we move on and stretch the dough closer to the edges. The dough is considered ready when a thick piece begins to turn into a thin cake, which literally shines through.
