To prepare the salad, take a young small-sized zucchini, wash it thoroughly, dry it and, without removing the skin, cut it into small cubes.

The lemon makes this dish more sophisticated. Use fresh lemon juice and fresh zest. Pour the prepared zucchini with juice in the amount of two tablespoons and add a teaspoon of grated zest. Stir well, adding salt to taste, and place the bowl of courgettes in the refrigerator or leave at room temperature. Incubate for 1-2 hours.

After the indicated time, continue cooking the salad. To do this, take large tomatoes, wash them thoroughly. At the top of the fruit, make a cruciform incision in the skin and place this side down in a suitable container: a saucepan or heat-resistant bowl. Heat water to a boil and pour boiling water over the tomatoes so that they are completely covered with boiling water. After 2-3 minutes, drain the hot water and dip the tomatoes in cold water. After a minute, you can carefully remove the skin from the tomatoes. Seed tomatoes and cut into cubes.

Finely chop the parsley, pre-scalded with boiling water. Use kitchen scissors or a glass or stone board and a ceramic knife to preserve the flavor of the greenery.
