Step 1

Raw potato salad can be prepared from the start of the new potato season until November. It is believed that raw potatoes should not be eaten from late autumn, since the concentration of the toxic substance solanine in the tubers increases.

Wash and peel raw potatoes. Grind the tubers with a Korean salad grater. Then pour cold water over the potatoes and leave for 5 to 10 minutes.

Meanwhile, peel and rinse the bell peppers, then cut the pods into thin, long strips. Peel and cut onions into thin feathers, salt and carefully remember with your hands, then pour cold water and let it brew for 5 minutes. Peel and chop the garlic with a knife, on a fine grater or passing through a press. Chop the herbs finely. It can be any greens you like: dill, parsley, cilantro, etc.

Step 3

Combine honey, vegetable oil, a pinch of salt, lemon zest and ground pepper in a glass. Stir until smooth.

Rinse the potatoes with running water over a sieve. Rinse until the water is clear. Squeeze the potatoes thoroughly and place on a platter.

Step 4

Drain the water in which the onions were soaked, rinse the vegetable and squeeze, removing excess liquid. Place the onion over the potatoes. Add bell peppers and herbs to this, pour in the prepared sauce-dressing of honey and vegetable oil, mix the raw potato salad and salt to taste.
