Potato potato pancakes (pancakes, or potato pancakes) are a traditional dish of Belarusian cuisine that has become widespread among Russians, Ukrainians, Jews and many Eastern European peoples. Deruny is usually served hot, with sour cream, butter, fried bacon or meat.

Traditional potato pancakes

A feature of potato pancakes is that finely grated potatoes, along with other components (vegetables, meat), are formed in the form of cutlets or pancakes, which are further fried in a regular pan. You will need:

- 900 g of potatoes;

- onions - 1 pc.;

- egg - 2 pcs.;

- 2 tbsp. l. flour;

- vegetable oil;

- 1-2 tbsp. l. sour cream;

- salt, pepper (to taste);

- frying pan;

- food processor, grater;

- sieve.

Wash medium or large potatoes, peel and finely grate until smooth. In order to make it easier for yourself and not to injure your hands, you can use a combine. Place the grated potatoes on a sieve and separate the potato juice.

Wash the onions, peel and grate in the same way, and then add to the potatoes. You also need to add eggs, flour, salt and pepper (to taste), mix thoroughly.

Heat vegetable oil in a skillet. Then form potato pancakes from the following calculation: to prepare 1 potato pancake, 1 tbsp. l. masses. It is necessary to fry the potato pancakes until golden brown, and then turn over to the other side.

Serve warm potato pancakes with sour cream.

Potato pancakes with meat

Potato potato pancakes with the addition of meat are very tasty and satisfying. To prepare this dish, you will need the following ingredients:

- 500 g of potatoes;

- 150-200 g of meat;

- onions - 1-2 pcs.;

- garlic - 3-4 cloves;

- pepper, salt (to taste);

- vegetable oil;

- sour cream, sauce, ketchup (optional);

- frying pan;

- food processor, grater;

- meat grinder.

First, prepare the minced meat: for this, the meat can be scrolled until smooth with a meat grinder, or simply cut into small pieces, and then chopped with a sharp knife. Wash and peel the onions, then add to the meat, salt and pepper to taste, mix well.

Wash the potatoes and grate them finely (you can use a harvester). Add the egg, flour, salt and garlic crushed with a garlic press to the potato mass. Mix all components.

Preheat a frying pan on the stove, add vegetable oil, and then spread the grated potatoes in thin scraps, and put the minced meat pieces on top of it, and then cover the meat with another layer of potatoes. Fry such potato pancakes with meat on both sides until golden brown.

Serve hot potato pancakes with meat to the table. Sour cream, ketchup or any sauce of your choice will be a tasty addition to them.
