It is necessary

  • - 400 g loin;
  • - 100 g of butter;
  • - 400 g of cottage cheese;
  • - four eggs;
  • - thyme;
  • - two tbsp. spoons of meat broth;
  • - lemon.

Instructions

Step 1

Cut the loin into thin slices, place in a preheated pan and fry. It will be quite enough to warm up the loin well and let it lightly brown.

Step 2

Pour the curd into a deep bowl, add the yolks of two chicken eggs and mix gently. Beat the protein with a mixer until a thick, stable white foam forms and add to the curd in a bowl.

Step 3

Take a baking dish, grease it with oil. Place the fried loin slices evenly over the entire bottom. Add the curd dough on top, carefully distributing it over the entire form. Top with thyme and the remaining loin slices.

Put in an oven preheated to 180 ° for 30-35 minutes.

To prepare the sauce, you need to add two yolks, two tablespoons of cold meat broth. Stir and place the mixture in a water bath. Add butter, lemon juice and zest. Season with salt and cook, stirring constantly so that the sauce does not boil or flake off.
