Step 1

Prepare the chicken for roasting. To do this, the carcass should be freed from possible remnants of feathers and entrails, thoroughly washed under water at room temperature, but by no means hot - the chefs are of the opinion that hot water negatively affects the delicate chicken skin and it becomes harder.

Step 2

Salt the outside and inside of the chicken. If you want to get a golden crust, then grease the chicken skin with fat or butter. Some housewives, in order to obtain the same result, use a method such as greasing the carcass with mayonnaise or a mixture of mayonnaise and adjika. And, although mayonnaise is stratified when baked, they claim that it is he who gives the chicken the color and special taste so beloved by many. Try replacing mayonnaise with a spoonful of honey and you will see that the crust is even more crisp and golden, and the aroma of the dish is divine.

Look for a glass bottle or tall ketchup jar that fits the diameter of the hole through which the entrails were removed from the chicken (usually Baltimore packs its ketchups and sauces in these matching glass bottles).

Fill the bottle half or slightly more with regular tap water and spread the legs apart and place the chicken deep on the neck of the bottle. The chicken should sit firmly on the bottle, not stagger, the whole structure should be stable.

Cook for about 10-15 minutes at this temperature, and then you can lower it to 190-200 and continue baking for another 30-35 minutes (large chicken is cooked a little longer).
