The useful substances contained in chokeberry can be listed for a long time. Almost all of them are preserved in wine made from it. Making the drink is simple. In addition to the main ingredient, you only need sugar and raisins.
Chokeberry or chokeberry is an unpretentious plant that many gardeners grow. Knowing how to make black chokeberry wine, you can make an amazing drink - aromatic, natural, healthy in moderation.
Recipe number 1
To make chokeberry wine, take:
- 1 kg of chokeberry;
- 1 kg of sugar;
- 1.5 liters of water;
- 80 g of raisins.
After the harvest of this berry is harvested, it does not need to be washed. Surface bacteria promote better fermentation. A shower for raisins is excluded for the same reason.
Sort out the berries and raisins from the debris and place in a 3-liter jar. Pour 400 grams of sugar there and pour in water. Cover the jar with a plastic lid that has a cut in the middle to allow air to escape.
Place the container in a warm place and shake the contents very gently every day. This will help keep the drink from getting moldy. You do not need to open the lid.
After 7 days, add 250 grams of sugar. A week later - the same. The content should ferment for another month. Then add 100 grams of granulated sugar and strain the drink through cheesecloth.
Pour chokeberry wine into bottles, close them with lids and put them in the basement or refrigerator. Here it will stand for ten days. After that, you can make the first tasting of an excellent homemade drink.
Recipe number 2
The second method requires manual work, literally. Take 6 kilograms of berries and crush them with your hands. If it’s tiring, add kitchen appliances to the process. Let a blender grind the chokeberry fruit a little.
Pour the berries into a 10 liter container. It's great if you have a dark glass bottle. Add 3 kilograms of sugar there. If you want a sweeter drink, you can add a little more of this ingredient.
Add a handful of raisins and stir or shake the contents of the container. Further, the wine is sent to ferment in a warm place. The contents are shaken daily to prevent mold from forming on the surface.
After this time, the berries should float to the surface. This means that you can proceed to the next stage. Filter the juice into a 5-liter jar, squeeze the juice from the pulp and pour it in there. Do not discard the pulp itself yet.
Install a water seal on top of the jar or wear a punctured rubber glove. Remove the container for 7 days in a dark place.
Pour the pulp with 1 kilogram of sugar and add 1 liter of water to it. Stir the mass with your hands and also remove the ferment for a week in the heat. After that, the contents are filtered. The pulp is thrown away, the juice is added to a common container with a water seal.
In this form, the drink will stand for 2 weeks. Then it is filtered by bottles, corked with lids and put into the cellar. The wine will be ready in 2-4 months. The longer it costs, the tastier it will be.
