Rabbit with baked apples and parsley and nuts sauce

To prepare this mouth-watering dish, you will need the following products:

- 800 g of rabbit meat;

- 4 apples;

- 100 g of pine nut kernels;

- 100 g of parsley;

- vegetable oil;

- salt.

Wash the rabbit, pat dry with a paper towel and cut into portions. Then place them on a greased baking sheet or in a fireproof dish and place in an oven preheated to 200 ° C to bake. If the rabbit is low-fat, add the butter chunks.

Wash and dry the apples, carefully cutting out the cores with seeds, place them in a bunny dish and bake with the meat.

Rinse the parsley greens, dry and chop finely together with the kernels of pine nuts. Stir well and add to meat and apples about half an hour after starting to bake. Season with salt and cook everything together for another 5 minutes.

Then place the rabbit pieces together with the baked apples on a platter, decorate with the parsley and nuts sauce and serve.

Rabbit baked in sour cream

To bake a rabbit in the oven in sour cream, you need to take:

- 1 carcass of a rabbit (1-1.5 kg);

- 500 g sour cream;

- 3-4 cloves of garlic;

- juice of one lemon;

- ground black pepper;

- salt.

Rinse the cut rabbit carcass under running water, dry with a towel or napkin and cut into large portions. Peel the cloves of garlic and cut into thin slices. Season the rabbit with salt, pepper and garlic. Then pour over freshly squeezed lemon juice and keep in the cold for 8-10 hours.

After this time, place the pickled pieces of rabbit meat on a deep baking sheet or in a saucepan and pour over sour cream. Then place in an oven preheated to 200 ° C and bake until tender. The baking time depends on the size of the carcass (an hour is enough to cook a kilogram of meat, and about one and a half hours for a one and a half kilogram carcass).

Rabbit meat can be marinated in pomegranate juice. In this case, it should be baked without sour cream and served with sour cream sauce.

To prepare sour cream sauce with horseradish you will need:

- 150 g horseradish;

- 150 g sour cream;

- sugar;

- salt.

Grate the peeled and washed horseradish root on a fine grater. Then add sour cream, salt, sugar and mix thoroughly. For a more spicy sauce, it is recommended to use mayonnaise along with sour cream. Transfer the prepared sauce to a saucepan and serve with the bunny baked in the oven.
