One of the popular recipes that significantly soften rabbit meat in the oven involves adding fermented milk and some other products to the dish. So, to make your rabbit soft and juicy in the oven, use the following ingredients:

  • 1 carcass of a rabbit;
  • half a glass of low-fat kefir;
  • half a glass of low-fat sour cream;
  • 3 tablespoons mustard
  • 3-4 onions;
  • vegetable oil;
  • herbs and spices;
  • salt to taste.

Rinse the rabbit meat and chop into equal pieces. Peel the onion and cut into rings. Place the meat in a bowl, sprinkle with seasoning to taste, place onion rings on top and season with salt. Add kefir to a bowl of meat so that it is completely hidden in the liquid. Cover with a lid and put in the refrigerator for marinating for 10-12 hours (preferably overnight).

Add mustard to the dish (you can change the portion depending on your taste preferences), stir and stand for another 20-30 minutes at room temperature. Prepare a baking dish, pour in the sunflower oil and lay out the rabbit meat pieces. Preheat the oven and place the dish for 15 minutes.

Remove the browned rabbit meat and turn over to the other side, then bake again for 10-15 minutes. Take out the dish, sprinkle it with herbs, cover it with marinade and continue to simmer in the oven until it is fully cooked (the meat should acquire a brownish-golden hue. 5-10 minutes before the end of baking, pour additional sour cream over the rabbit.   • 1 lemon;
  • ground black pepper;
