This method of cooking fries is convenient in that the dish requires about the same amount of oil as is usually taken for frying "ordinary" potatoes.
Take 6-7 medium potato tubers, wash and peel them. To get rid of excess starch, it is better to rinse the potatoes not once, but twice. For 6-7 potatoes, you need about 300 ml. oils. Choose strong tubers for frying, without holes or dark spots.
Place a deep skillet over high heat and add vegetable oil. While the oil is heating up, slice the potatoes.
For slicing, you can use a special tool, or you can use an ordinary kitchen knife and chop the tubers into strips. If you start cutting potatoes with regular cubes, then they will not have time to properly fry. Be sure to put the prepared potato straws on a kitchen towel so that the potatoes dry out, otherwise splashes cannot be avoided.
Put a third of the prepared straws evenly in boiling oil so that it has time to completely fry. Usually four minutes are enough for frying. Spread a paper towel on a tray and place the cooked potatoes on top of it to absorb the excess oil into the paper. You can salt potatoes directly on a towel.
Repeat the same procedure with the remainder of the potato strips. When the oil starts to burn, pour in the fresh oil and let it heat up well.
In this simple way, you can cook fries at home. It can be served as a side dish or as a separate dish. Such potatoes with cheese sauce are especially good.
