Ingredients:

  • 1 kg of pork ribs;
  • 2 white onions;
  • 1 zucchini (medium size);
  • 1 small hot pepper;
  • 4 cloves of garlic;
  • rock salt;
  • spices to taste
  • herbs: a sprig of basil (purple), 2 sprigs of thyme, 3 sprigs of fresh mint.

Preparation:

  1. Wash the zucchini, peel the peel from it with a vegetable peeler, cut into cubes (no need to grind it).
  2. Peel off ordinary white onions and cut into large slices.
  3. Cut the pork ribs into portions convenient for you, be sure to rinse under running water, carefully removing small fragments of bone. It will be very unpleasant if at least one small shard is caught during a meal, and you can simply break a tooth by accident.
  4. Let's deal with spices and herbs: mix all the ground spices into one dry mixture, just finely chop the herbs, chop the hot pepper too, chop the garlic finely.
  5. Heat a saucepan on the stove, pour a little oil for frying into it, add chopped zucchini and onion mixed to the bottom.
  6. Immediately put a layer of processed ribs on them, close the saucepan with a lid and put the stove on medium heat. Cook for about 25 minutes.
  7. After a while on the meat, scatter all the berries, cardamom seeds, one chopped clove of garlic and sprinkle with part of the mixture of ground spices, simmer the same amount.
  8. After the next 25 minutes, season the meat ribs with the remnants of ground spices, fresh chopped herbs, salt, add hot chopped peppers and garlic. Simmer the ribs this time for about half an hour.
  9. When serving, pork ribs can be garnished with fresh parsley and dill.
