Rabbit meat has a specific smell that can be easily removed using various marinades. In addition, marinades give it a unique aroma, softness and juiciness, as a result of which even not the youngest rabbit meat will turn out to be very tasty and rather tender. There are several popular marinades that cook quickly and make your rabbit even more appetizing than it is.

Classic marinades

To prepare a classic marinade, you need to take 0.5 glasses of any wine, the same amount of vegetable oil, 4-5 garlic cloves, fresh basil and peppermint, as well as dry basil, oregano, thyme, rosemary, a few black peppercorns, bay leaf and salt taste. The wine is mixed in a bowl with vegetable oil and finely chopped / pressed garlic. Dry herbs, salt, peppercorns and bay leaves are also put there, after which they tear fresh mint and basil with their hands, which are mixed with the marinade. Finally, add a glass of warm water to the bowl and put the rabbit meat in the finished marinade. It is recommended to marinate the rabbit under a closed lid in the refrigerator for 2-24 hours.

To make a marinade with olive oil, you need 50-70 ml of olive oil, 3-4 cloves of garlic, a bunch of fresh cilantro, parsley or dill, as well as a few bay leaves, black pepper and salt to taste. Chop greens and garlic, mix with vegetable oil, salt and pepper. The resulting mixture is thoroughly rubbed into the prepared rabbit meat and put in the cold for 4-5 hours, after which the remaining greens are removed from the carcass and the rabbit meat is prepared according to the selected recipe.

Original marinades

An excellent solution for marinating rabbit meat is a lemon and orange marinade. To prepare it, you will need to take 1 medium orange, 1 lemon, 100 ml of mayonnaise, a few cloves of garlic, as well as salt and ground black pepper to taste. Mayonnaise is mixed with salt, pepper and chopped garlic, coated with rabbit marinade and poured with lemon juice on the meat. Then it is covered with orange circles, wrapped in foil and refrigerated for 1 hour. If you wish, you can add spice to the rabbit by pouring a little good cognac over it, which is then set on fire.

To prepare the broth marinade, you need to take ½ cup of hot broth, 4 sprigs of fresh thyme, 1.5 cups of dry white wine, 1 clove of garlic, 2 bay leaves, 3 tablespoons of vegetable oil and a pinch of lemon zest. You will also need 1 teaspoon of salt, ½ teaspoon of sugar, and black pepper to taste. Put the rabbit meat in a pot, add thyme, then boil the meat broth with pepper, bay leaf, lemon zest and wine, pour the rabbit meat with marinade and put it in the refrigerator for a day.
