Step 1

First you need to prepare the traditional Ryzhik dough. To do this, take eggs, break into a bowl and add sugar. Beat until the sugar crystals are completely dissolved. Leave the mixture to sit a little.

Put half the butter in a metal ladle, add honey and baking soda. Cook over low heat. If the mass has acquired a caramel shade, then turn off the burner. Cool for 10-20 minutes.

Gently combine the two resulting mixtures. Gradually add flour and knead the dough, which ideally should not be very steep and yet elastic enough. Form an oblong roller from the dough and divide into 6-8 parts. This will be the basis for future cakes.

To prepare the signature cream of the Ryzhik cake, you need to mix the boiled condensed milk with the remaining butter and beat with a blender. The consistency of the cream should be light and airy.

Put the first crust on a flat dish, spread with cream using a cooking brush. Next, place the next cake. Repeat the procedure until all the cakes are gone.
