Brine. Take one part salt to four parts water. Mix thoroughly until the salt is completely dissolved.

Rub the fish with copious amounts of coarse salt.

Place the salted fish loosely, belly up, on the bottom of the pan.

After 3-5 days, depending on the amount of fish, remove the bundles with fish from the pan.

Place the bundles in a large cup and rinse for an hour with cold water.

After that, the fish should be hung out in the open air. Spread it out on a bundle so that the fish do not touch each other and hang with their belly out.

Small fish need to be dried for two weeks, large fish for five weeks.
