Cooking vegetables, meat, poultry or fish in the oven is a favorite way of cooking. This frees you from standing over the stove and constantly stirring and turning, which gives you time to prepare a side dish, sauce, dessert or anything else. There is one old, but not very popular recipe for cooking fish in the oven today. This dish is called "Pike in Italian".

- Wheat flour - 200 g
- 1 egg
- Butter - 300 g
- Anchovies - 10 pcs
- Champignons - 4 pieces
- Crushed crackers - half a glass
- Grated hard cheese - half a glass
- Fresh pike - 800 g - 1 kg
- 1 lemon
- Dry white wine - 300 g
- Pinch of pepper
- Vegetable oil - 200 g
Instructions
Step 1
Make a tough dough with 200 g flour, 100 g vegetable oil and 1 egg. Roll out and line the bottom of a baking dish with it.
Step 2
Chop anchovies with mushrooms and 200 g butter. Place half of this mass on the bottom of the mold. Sprinkle generously on top with crushed breadcrumbs mixed with cheese.
Step 3
Cut the pike into large pieces, free it from the bones. Place the pike chunks on top of a layer of breadcrumbs and cheese.
Step 4
Pour lemon juice over pieces of pike, season with salt, pepper and wine so that the wine covers the fish.
Step 5
Top the pike with the other half of the anchovies, mushrooms and butter.
Place the remaining chopped butter on top.
Step 6
Cover the form with parchment and send it to the oven to cook for 30-40 minutes at a temperature of 180 ̊С.
