Traditional Chinese dumplings are prepared for all holidays, and they are often made by the whole family or a group of friends. The main difference of the dish is a very simple dough and multicomponent filling. Dumplings can be steamed, boiled or fried - it all depends on the situation and the specific recipe.

Minced Meat and Shrimp Wontons

Delicate and juicy dumplings are stuffed with complex minced meat, shrimps, vegetables or mushrooms, always adding spices. They should be served hot, accompanied by soy sauce.

Ingredients:

  • 200 g lean minced pork;
  • 400 g of large peeled shrimp;
  • 2 tbsp. l. rice flour (can be substituted with starch);
  • 1 egg white;
  • 0, 5 tbsp. l. sesame oil;
  • 0.5 tsp ground black pepper;
  • 130 g of pickled champignons;
  • 2 tbsp. l. soy sauce;
  • 2 tbsp. l. semi-dry white wine;
  • 0.5 tsp Sahara;
  • 200 ml of water;
  • 1 tbsp. l. refined vegetable oil;
  • 600 g wheat flour;
  • salt.

Peel the shrimps, chop, mix with minced meat. Add chopped mushrooms, salt, soy sauce, ground pepper, sugar, starch and egg white. Mix everything thoroughly.

Prepare the dough. Sift flour with a slide, make a depression on the top. Boil 100 ml of water, pour into the well, stir. Add oil, salt and remaining water, and knead a lighter dough. Leave it on for 10 minutes, divide into 3 parts. Wrap two in foil and set aside, roll the remaining dough into a layer 2 mm thick.

Cut out circles with a glass (diameter about 5 cm). Put a teaspoon of the filling in the center of each. Blind dumplings in the form of bags with an elongated neck. Arrange the products on a plate, put in the refrigerator. In the same way, mold dumplings from the remaining dough.

Preheat double boiler, place wontons on wire shelf and cook for about 7 minutes. Serve hot dumplings as a starter or main course.

Fried gothi dumplings

A dish that is traditionally prepared for the Chinese New Year. It is customary to sculpt homemade dumplings with the whole company, they can be prepared in advance and frozen, and then fried in portions. It is better to cook gothi in sesame oil, but you can use any other unscented vegetable oil.

Ingredients:

  • 300 g minced pork;
  • 1 clove of garlic;
  • 2 cm of ginger root;
  • 1 large stalk of celery;
  • 2 tbsp. l. soy sauce;
  • 200 g wheat flour;
  • 100 ml of water;
  • salt;
  • refined vegetable oil for frying.

Peel the celery stalk of tough fibers, cut into large pieces and boil until soft. Finely chop the garlic and ginger. Put the minced meat in a bowl, add chopped celery. Add ginger and garlic. Pour in soy sauce, stir.

Sift wheat flour into a separate container, add salt and warm boiled water. Mix the ingredients thoroughly, knead an elastic soft dough. If it turns out to be too runny, add more flour. Divide the dough into pieces, roll them one by one into thin layers. Cut out the circles, put a portion of the filling on each. Pinch the dumplings in the form of crescents, connect the edges tightly so that they resemble scallops.

Heat refined vegetable oil in a deep frying pan. Put the dumplings in portions and fry them on all sides until golden brown. You need to turn the gothi carefully, the thin dough breaks easily. Serve the dumplings hot.
