Step 1

Knead a dough consisting of eggs, flour and salt in advance. If you do not want to waste time on this, then you can buy ready-made in any grocery store. However, for traditional Chinese dumplings, the dough is made on its own.

Next, put the minced meat in a separate bowl and mash thoroughly. In this case, it is better to use a wooden spatula.

Place the Chinese cabbage on a cutting board and chop into large pieces first. Then, with a sharp knife with a wide blade, chop the cabbage to a state of gruel for 15 minutes. This will make the minced meat more juicy and softer.

Add chopped cabbage to the minced meat and knead well, then salt, pepper and season. Leave the minced meat for 7 minutes.

Step 5

Pour sesame oil into a metal ladle or cup and heat over a fire to a temperature of at least 90 degrees. Make sure that the oil does not start burning. Otherwise, you will spoil the taste of the minced meat. Gently pour the hot oil into the cabbage and meat mixture and stir in brisk strokes. Under the influence of oil, the minced meat will brighten a little.

Take the dough, cut a small piece and roll it out with a rolling pin on a hard surface. A smooth circle of dough can be made using any lid with sharp edges. Just press down on the dough and rotate around the axis several times, and then remove the excess residue.

Place the required amount of minced meat closer to the edge. Please note that the minced meat should be positioned on the dough in such a way that oil does not leak out during sculpting.

Connect the ends of the dough with a pinching motion. Traditional Chinese dumplings are shaped like Russian dumplings. Sprinkle the finished dumpling with flour on top and put it on a tray, which should be put into the freezer at the end of cooking.
