Step 1

Pour the pre-sifted flour on the table in the form of a slide. Make a funnel in the flour and beat in a chicken egg. Also, pour some water into the flour and add a pinch of salt. Knead the dough, adding flour and water as needed. The more thoroughly you knead the dough, the more elastic it will be.

Step 2

Wrap the finished dough in plastic wrap and refrigerate for 30-40 minutes. Take this time to prepare the minced meat. The recipe for classic dumplings involves using at least 2 types of meat. Most often, minced meat is prepared from beef and pork in a 2: 1 ratio. Cut the meat into small pieces. Peel the garlic and cut the onions into wedges. Pass all the ingredients through the fine grid of a meat grinder.

Step 3

Add chicken yolk, some milk, black pepper and salt to the minced meat. The minced meat should be kneaded for several minutes so that it acquires a homogeneous structure. Milk is used for juiciness of ready-made dumplings. Instead of milk, you can add a little water to the minced meat.

Step 4

By this time, the dough will become sufficiently elastic and you can start rolling it out. Roll out the dough with a rolling pin. The layer thickness should not exceed 2 mm. Using a small glass of dough, cut out circles of the same size. Take such a circle in your hands and stretch the dough slightly. Place a teaspoon of cooked minced meat in the center. Seal the edges, giving the product the shape of a dumpling. Then connect and press the “ears” firmly. A neat dumpling is ready.

If you decide to cook dumplings for future use, take care of their proper storage. You need to store dumplings in the freezer, spreading them on a cutting board or baking sheet. After the food is completely frozen, transfer the dumplings to a plastic bag.

There are many ways to make classic dumplings. They can be baked in a pot in sour cream sauce, fried in a pan, boiled and served with a fragrant broth.
