It is necessary

    • 1 kg of pork;
    • 150 g pork fat (margarine or vegetable oil);
    • 300 g of fresh mushrooms;
    • 200 g of onions;
    • 300 ml of mushroom broth;
    • 50 g of garlic;
    • Bay leaf;
    • greens;
    • salt
    • pepper to taste.

Instructions

Step 1

Wash the pork in cold running water, cut into pieces of 30-50 g, salt, sprinkle with black pepper. For this dish, it is advisable to take boneless meat. Fry the meat in pork or any other fat until tender, stirring occasionally. Placing the meat in hot fat rather than in a cold skillet will make it juicier when cooked.

Step 2

Put the peeled and washed mushrooms in a saucepan, cover with cold water. Place the saucepan, covered with a lid, over high heat. As soon as the water boils, remove the lid, reduce heat. The water should boil quietly. Use a spoon to gently scoop up the dark foam from the edges of the pot. Cook the mushrooms, stirring occasionally, until they sink to the bottom. Discard them in a colander. Rinse with cold water. Leave some of the mushroom broth for further cooking. Finely chop the mushrooms.

Step 3

Peel the onion, cut into small pieces, lightly fry in vegetable oil.

Step 4

Mix the fried meat, boiled mushrooms and onions. Add bay leaves.

Step 5

Put the prepared meat in clay pots, pour the mushroom broth so that it covers the contents. Cover the pots with lids. Put them in the oven and simmer until tender at 180 degrees.

Step 6

Taking care not to burn yourself, remove the pots of meat and mushrooms from the oven. Place the contents on a plate. Sprinkle with finely chopped herbs and chopped garlic.

Bon Appetit!
