Many people buy a wide variety of yoghurts with various preservatives in the store every day. However, making healthy homemade yogurt is pretty easy. The main thing is to have quality milk.
Ingredients:
- 2 liters of milk;
- ¼ cups heavy cream (optional);
- 3-4 tablespoons of plain yogurt with bifidobacteria;
- fruits or berries as desired.
Preparation:
- Rub a heavy-bottomed saucepan with an ice cube: this will prevent possible burning. Add milk, cream and bring mixture to a boil, heating to about 90 degrees, until it bubbles. Stir the milk constantly until it boils.
- Remove the pan from the heat and let it cool until you can keep your pinky finger in the mixture for about 10 seconds. If you don't want to wait, fill the sink with cold water and put the mixture to cool in an ice bath, remembering to stir to cool more evenly.
- Pour half a glass of warm milk into a small bowl and beat with the yogurt until smooth. Transfer the yoghurt and milk mixture back to the saucepan with the remaining warm milk.
- Cover the pot with a tight lid, while trying to keep it warm. This can be done by covering it with a heated towel, placing it on a heating pad, or simply placing it in a fairly warm place.
- The yogurt should be in this state for 6 to 12 hours, until it becomes thick and tart. The more time it stands, the thicker it will be.
- Transfer the pot to the refrigerator and leave to cool for about 4 hours while it continues to thicken. You can add pieces of fruit or berries to yogurt as you wish.
