Appetizing and very satisfying sorcerers are a dish of Belarusian cuisine. These unusually delicious stuffed pancakes are another variation on the familiar and simple duet of potatoes and meat. Cook the wizards and fry them in one of two ways in the form of pancakes or donuts.

Sorcerers: recipe

Ingredients:

- 1-1, 2 kg of potatoes;

- 400 g of pork;

- 2 chicken eggs;

- 2 onions;

- 4-5 tbsp. flour;

- a pinch of ground black pepper;

- salt;

- vegetable oil for frying.

Meat for sorcerers should be quite fatty. Best for this quality is the neck of the pork carcass. If you took a lean piece, add a little fat or vegetable oil to the minced meat.

Wash and peel potatoes and onions. Grate the tubers and 1 onion on a fine grater, mince, chop in a food processor or grind in a blender. Discard the resulting puree in a fine-mesh colander and strain out the resulting liquid, stirring the mass and pressing it down with a spoon.

Take your time to pour the potato juice into the sink, let it settle for a bit. Gently drain the liquid and add the starch residue to the dough. In this case, the amount of flour can be halved or even do without it.

Transfer the mixture to a large bowl and toss with the beaten eggs, salt with 1 tsp. salt and add the required amount of flour. Stir the potato mixture well to achieve a smooth consistency.

Rinse a piece of pork, dry, cut into cubes and scroll in a meat grinder. Season the minced meat 0.5 tsp. salt, pepper and add a second onion, chopped with a knife or grated. Dilute the filling with a couple of tablespoons of water to make it softer, and mix thoroughly, preferably with your hands.

Sorcerers with pancakes

Heat vegetable oil in a skillet, setting the temperature to medium. Spoon a few thin potato pancakes with a tablespoon. Spread 1-1.5 tsp on them immediately. meat filling, distribute evenly and cover with 1 tbsp. test. Fry sorcerers for 5-7 minutes on each side. Serve hot with sour cream, pickles or sauerkraut, rich meat or mushroom broth.

Filled Wizards: Donuts

Pinch off a piece of dough the size of an apricot, and mold a cake out of it with your fingers. Place a walnut-sized ball of minced meat in the center. Close the filling by joining the edges of the potato mug and give the product a round donut shape or an oblong donut shape. Cook the sorcerers in a large amount of vegetable oil until golden brown, first on one side, then on the other.

In Belarus, in the homeland of sorcerers, they prefer to fry them not in vegetable oil, but in pork fat.

If desired, send them to rise in the oven for 10-15 minutes at low temperature, pouring a glass of sour cream.
