Duck cooked according to the recipe below turns out to be very appetizing, with a ruddy crispy crust and a delicate, spicy-sweet note.
Ingredients:
- Whole duck carcass - 1 piece;
- Oranges - 3 pcs;
- Dried apricots - 120 g;
- Red apple - 3 pcs;
- Prunes - 120 g;
- Onion - 1 medium head;
- Garlic - 5 cloves;
- Olive oil - 60 ml;
- Green dill - ½ bunch;
- Lemon - 1 pc;
- Spices for poultry;
- Ground red pepper and salt.
Preparation:
- Peel all the garlic and onion, wash everything. Chop the onion and half of the garlic into small cubes in advance.
- Rinse the duck carcass thoroughly under running water, grate with pre-chopped garlic residues.
- A couple of hours before cooking, it is necessary to soak the prunes and plums in warm water, and only after the specified time has elapsed, chop the dried fruits with a knife.
- Thoroughly wash the apples, peel a couple of them, divide into two and cut the core, and chop the pulp into a large cube and pour over lemon juice so that the apples do not darken.
- Peel two oranges, like apples, cut into 4 parts, and then cut into cubes.
- In a bowl, combine all the prunes, dried apricots, chopped onions, pieces of apple, orange and garlic, mix everything, add salt and red pepper.
- Squeeze the juice from the second half of the lemon, grease the duck with it, rub with salt, red pepper and poultry spices.
- Fill the bird with the fruit mixture, and then send it to the sheet, pre-oiled with vegetable oil. Cook in an oven at a temperature of 220 degrees for about 50-60 minutes.
- Wash the dill thoroughly. Cut the orange into slices without peeling, and cut the apples into pieces.
- Before serving, put the bird on a mold, add oranges, apples, dried dill sprigs next to it.
