Chicken kebab is no less popular than other types of meat, and the reasons for this are quite obvious. Poultry is much cheaper and at the same time much healthier and lighter than pork, lamb or beef. Soak it in soy sauce, kefir, or a spicy tomato marinade for a great fire or grill dish.
Soy marinade for chicken
Ingredients for 1.5 kg of meat:
- 150 ml of soy sauce;
- 5 cloves of garlic;
- 1, 5 tsp curry;
- 3 cm of ginger root.
Peel and grate the ginger root and garlic cloves on a fine grater, combine them with curry and soy sauce in a deep bowl. Place the thighs or legs of the chicken in there and mix everything well so that the dark mass evenly covers the meat. Soak it in the soy marinade for at least 2 hours in a cool place. Grill chicken skewers on a wire rack or skewers.
Add a little honey to the soy marinade and the chicken will have a nice crispy crust after charcoal-grilling.
Kefir marinade for chicken skewers
Ingredients for 1 kg of chicken parts:
- 1 tbsp. kefir;
- 1 tbsp. ketchup;
- 3 cloves of garlic;
- 5 dried cloves;
- 0.5 tsp ground black pepper;
- 1 tsp salt.
Rub the salt into pieces of chicken that are approximately the same size - legs, thigh halves, wings and breast quarters. Mix kefir with ketchup, cloves, crushed in a mortar, black pepper and crushed garlic. Marinate pieces of poultry in the resulting mixture, leaving them on the bottom shelf of the refrigerator for 6-10 hours. Drizzle with the remaining marinade as you cook.
Spicy marinade for chicken wings
Ingredients for 1 kg:
- 1 medium sour or sweet and sour apple;
- 2 tbsp. tomato paste;
- 2 tbsp. soy sauce;
- 0.5 tsp Tabasco sauce;
- 2 tbsp. vegetable oil;
- half a lemon;
- 3 tbsp. brown sugar;
- 0.5 tsp each cinnamon and black pepper;
- 1 tsp sweet ground paprika;
- 1 tsp salt;
- 150 g butter.
Cut the peel from the apple, cut the core, mash the pulp. Squeeze the juice out of half a lemon, remove the seeds if necessary, pour it into a saucepan or small saucepan and place over medium heat. Dissolve brown sugar in citrus liquid, add fruit puree, tomato paste, vegetable oil and spices. Remove the cookware from the stove as soon as it begins to boil and stir in the tabasco.
If in your kitchen "arsenal" there is no Tabasco sauce or an almost similar chili sauce, put 1-1, 5 tablespoons in the marinade. red or green adjika.
Rub the wings with salt, put them in a slightly cooled marinade, stir and let sit in it for 2 hours. Melt the butter and spread it over the chicken skewers while cooking with a cooking brush.
