These quick skewers are perfect for a snack. A good option would be to serve kebabs on millet seasoned with herbs.
It is necessary
- - 4 chicken breast fillets;
- - 1 yellow pepper;
- - 400 g zucchini;
- - 1 small eggplant;
- - 150 g cherry tomatoes;
- - vegetable oil for lubrication.
- For the marinade:
- - 1 onion;
- - 2 cloves of garlic;
- - zest of 1 lemon, grated on a fine grater;
- - ½ teaspoon of cayenne pepper;
- - 1 teaspoon of fresh or dried cumin;
- - 3 tbsp. tablespoons of olive oil;
- - salt and ground black pepper.
Instructions
Step 1
Chop the onion finely, crush the garlic cloves. Cut the chicken into small pieces. In a large bowl, combine lemon zest, onion, garlic, cayenne pepper, and cumin. Add olive oil, salt and pepper. Add chicken meat and stir well. While the meat is marinating, cook the vegetables.
Step 2
Cut the yellow pepper in half and remove the seeds. Cut the peppers, courgettes and eggplant into small pieces. Heat the grill rack over high heat.
Step 3
Remove the chicken from the bowl and drain the marinade. String meat, pepper, zucchini, eggplant and tomatoes alternately on 8 skewers.
Step 4
Grease the wire rack with oil and place the skewers on top. Cook, turning occasionally, for 15 minutes, until the chicken is browned and the vegetables are tender.
