Sugar is familiar to everyone, it has a wide application and has been used for a long time, without it it is almost impossible to imagine cooking. However, despite its prevalence, it is not easy to get the product. It is even more difficult to achieve its purity.

Instructions

Step 1

The industry is known for cane and beet sugar. The basis of the reed is the reed, which grows, as a rule, in tropical countries. Initially, the cane is cut into small pieces and crushed to squeeze out the juice. After the solution is boiled down to a very thick state, sugar crystals are added. Subsequently, the process will lead to the formation of a finished raw material. Accordingly, the second type of this product is obtained from beets. Its production method is similar to the previous one. It should be noted that defecation of sugar juice plays an important role in the production of both types. This procedure is associated with cleaning from various impurities using quicklime.

Step 2

Cleaning is the main stage of sugar production, because it is it that contributes to the production of white sugar, which everyone is used to seeing on the table. The cleaning process is as follows: sugar juice is heated, then mixed with lime, which chemically destroys some of the unnecessary effects. The rest of them bind with poorly soluble residues. Then, from the resulting mass, the sucrose solution is evaporated and concentrated. In principle, in a chemical form, the effect of bowel movements is hardly noticeable. It allows you to get rid of impurities by no more than 2% of the total composition.

Step 3

It is advisable to purify sugar in 2 stages. The first involves refining, in which the concentration of lime, which helps to obtain white sugar, is low. The main thing here is to maintain the acidity of the juice at the level required for this.

Step 4

The second stage involves an increase in the concentration of lime by about 10 times. As a result, its excess is formed, and a physical process of purification from those impurities that were not removed from the composition of the mass at the first stage will take place.

Step 5

When carrying out cleaning, it is imperative to use good quality lime, which is added exclusively in the form of an aqueous solution, in another way it is called milk of lime. The final step in any cleaning is standing.
