Blueberry Ricotta Pie: Ingredients
- 2 eggs;
- 150 g of sugar;
- 85 g butter;
- half a teaspoon of vanilla extract;
- 225 g flour;
- a teaspoon of baking powder;
- a pinch of salt;
- zest of one lemon.
- 680 g ricotta cheese;
- 100 g of sugar;
- 3 eggs;
- 35 g flour;
- a teaspoon of vanilla extract;
- 340 g fresh blueberries.
Blueberry Cheesecake: Cooking
Preheat the oven to 175C. For the base, beat eggs with sugar, add butter at room temperature, beat again.
Sift flour and baking powder into a bowl, add lemon zest, a pinch of salt and vanilla extract. Mix the ingredients until smooth without lumps. Grease a baking sheet (about 22x30 cm), sprinkle lightly with flour, distribute the dough evenly.
In another bowl, mix all the ingredients for the cream except the berries.
Pour the cheese cream over the dough, spread and decorate with the berries.
Bake for 45-50 minutes, the cheese cream should turn slightly golden brown. Cool the pie at room temperature and refrigerate for several hours (preferably overnight).
