To make the salad richer in taste, complement the unleavened chicken with sour fruits and vegetables, fresh herbs and a savory dressing.

Chicken salad with tarragon

Such a salad can be made not only with chicken, but also with turkey fillets. Serve with white bread toast and chilled rosé wine.

You will need:

- 500 g chicken fillet;

- 220 g of a mixture of green lettuce leaves;

- 2 grapefruits;

- freshly ground black pepper.

For refueling:

- 200 ml of chicken broth;

- 1 orange;

- 1 bunch of tarragon;

- 1 tablespoon of olive oil;

- 0.5 tablespoon of red wine vinegar;

- salt.

For a prettier salad, use 1 pink and 1 white grapefruit.

First, prepare the dressing. Squeeze the juice from the orange, grate the zest. Set aside a few sprigs of tarragon, chop the rest of the greens. Heat the broth in a saucepan, add zest and juice, vegetable oil, chopped tarragon and vinegar to it. Stir, salt and boil for 2-3 minutes. Remove the saucepan from heat and let the sauce cool for at least 2 hours.

Boil the chicken fillet, refrigerate and cut into thin slices. Peel the grapefruits, disassemble into slices, remove the films from them and remove the seeds. Place the lettuce mixture on a serving platter and place the chicken fillet and grapefruit wedges on top. Pour the dressing over the salad, garnish with tarragon sprigs, sprinkle with black pepper and serve.

Chicken, tomato and mango salad

This salad is distinguished by a delicate but bright taste, combining the acidity of tomatoes, the sweetness of mango and the piquancy of smoked chicken.

You will need:

- 400 g of smoked chicken fillet;

- 200 g canned mango slices;

- 2 sweet large meaty tomatoes;

- a bunch of iceberg lettuce;

- a few sheets of Chinese cabbage;

- mayonnaise;

- ground paprika.

Canned mango can be replaced with fresh one. But for the salad to be tasty, the fruit must be very ripe and sweet.

Remove the mango slices from the jar and place them on a paper towel lined plate to absorb the excess syrup. Cut the chicken into thin slices, the tomatoes into slices. Tear lettuce and Chinese cabbage into pieces.

Place lettuce and cabbage on portioned plates, smoked chicken, tomatoes and mango slices on top. Add a tablespoon of mayonnaise to each serving and sprinkle with ground paprika.

Chicken, Rice and Celery Salad

You will need:

- 500 g chicken fillet;

- 1 tablespoon of vegetable oil;

- 100 g of boiled brown rice;

- 60 g of radishes;

- 3 sweet red apples;

- 2 stalks of celery;

- 100 g of blue cheese;

- a small bunch of seedless black grapes;

- 200 g of yogurt without additives;

- salt;

- 1 teaspoon lemon juice;

- 1 teaspoon of grain mustard.

Fry the chicken fillet in vegetable oil, cool and cut into strips. Cut the apples and radishes into thin slices, chop the celery into cubes. Place the chicken in a bowl, add the pre-cooked rice, apples, celery, radishes and grapes.

In a separate bowl, combine yogurt with lemon juice, mustard and salt. Pour the dressing over the salad, stir and serve.
