Refining is, in fact, the purification of oil from harmful substances, which, accumulating in the body, can cause a variety of ailments. Therefore, it is important to refine vegetable oils in order to save one from certain diseases. During refining, the oil loses its original smell and some of the nutrients, but this loss is insignificant, and in terms of nutritional value, refined and unrefined oil are approximately the same.

Instructions

Step 1

Oil refining takes place in several stages. First of all, hydration occurs: mucous and protein substances are eliminated from the oil, which spoil its taste. Then, in the neutralization stage, the oil loses heavy metals and pesticides. Then there is bleaching: the oil is filtered for a long time, cleaning it from ballast substances: phosphatides, wax and coloring components of carotenoids.

Step 2

If after cleaning the oil also undergoes deodorization, as well as freezing of the residues of plant wax, then it becomes transparent and completely loses its original taste and smell. Non-deodorized refined oil is more aromatic.

Step 3

Refined oils of different varieties are very similar in taste and color, so refined oils are often counterfeited: sunflower, corn or olive oil can be diluted with cheaper and less useful rapeseed, soybean or cottonseed oil. All of these oils are easy to mix. It is possible to determine falsification only in a special laboratory. Therefore, it is better to buy refined oil from well-known, long-established manufacturers.
