There are a lot of tasty and healthy food, but most often it includes fruits, vegetables and other plant products. But meat is no less useful if, moreover, it is cooked correctly. But there are also offal, among which the liver has the highest content of useful and nutritious substances. It contains a lot of complete proteins, which include such important elements as iron and copper. A properly prepared dish from fresh liver can provide our body with a full daily intake of many vitamins and minerals.

Instructions
Step 1
First, take the liver and remove the film from it. If it is difficult to remove, place it in boiling water for a few seconds and remove it immediately or simply pour it over with boiling water. Now you can clean it quickly and easily. Then cut the liver into small square pieces. To do this nicely and easily, do not defrost it all the way. In a slightly frozen form, the liver is easier to cut into even pieces, it will not slide on the board and jump out of your hands.
Step 2
Now you need to fry it. Fry the liver in a skillet in a little refined sunflower oil. Reduce heat and stir constantly. The liver does not need to be fried for a long time, two or three minutes are quite enough. Otherwise, it will become hard and dry. To make the liver tender, add a little milk during frying.
Step 3
Then peel the onions and carrots. Cut the onion into half rings and grate the carrots on a coarse grater. Fry them over low heat in a little sunflower oil until slightly golden brown. This will take no more than ten to fifteen minutes.
Step 4
Then take the pots, on the bottom of each put one bay leaf and one black peppercorn. Mix the liver with onions and carrots, salt to taste and place everything tightly in the pots. Then prepare the sauce. To do this, mix sour cream with ketchup in a ten to one ratio. When the sauce is ready, immediately pour over the liver in the pots. Fill the pots halfway to prevent the sauce from spilling over the edges of the crockery. After that, on a fine grater, rub a small piece of hard cheese and sprinkle it on top. Also, don't forget about fresh dill or parsley.
Step 5
Then close the pots with lids and place in the oven for twenty to thirty minutes. Serve this liver with boiled potatoes.
