Cooking liver in the oven is a very easy recipe that can be mastered in one go. As a rule, this recipe is accompanied by potatoes, which must be baked at the same time as the liver, as well as fresh or baked vegetables.
To prepare 4 servings of liver in the oven, you need: 600-700 grams of fresh beef liver, 4 large potatoes, 1 onion, 3-4 cloves of garlic, salt and pepper to taste. If you plan to expand the side dish with baked vegetables, then bell peppers (1-2 pcs.), Tomatoes (2-3 pcs.), Carrots (1 pc.) Are best suited.
The liver is a by-product, therefore it has a tangible smell, which many do not like, so before cooking it is worth holding it under running water for about 10-15 minutes, or leaving it in water for 30-40 minutes. Then the meat should be thoroughly dried, cleaned of all existing films and start cooking.
The liver is cut into fairly large pieces (6-7 cm in length). Then it should be seasoned with salt and pepper. It is supposed to use a minimum amount of spices with the liver in order not to spoil the delicate taste of the product. It is permissible to add finely ground black pepper and dried oregano. Some housewives advise to soak pieces of liver in milk for 15-20 minutes before cooking: so it becomes even softer and very pleasant to the taste.
The potatoes must be peeled, dried and cut into small wedges. It should be remembered that the liver will cook faster than potatoes, so the potatoes should be sliced thinly enough. It is better to salt the side dish in advance; you can also add herbs and spices traditional for baked potatoes (for example, rosemary or ground coriander). No additional sauces are needed, since the liver, being quite juicy, will saturate the potatoes itself, however, if you wish, you can add a little sour cream or heavy cream, preheated in a pan and mixed with a small amount of wheat flour, to the ready-made dish.
It is better to cut vegetables for such a dish into large slices, add salt. You can also moisten them with balsamic vinegar for a light scent. Garlic is necessary solely to add flavor to the dish; it is better to cut it into large pieces (along the slices) or leave the slices intact. It is important that the garlic is baked but not charred.
In a convenient frying pan or baking sheet, carefully place potatoes, vegetables, onions cut into rings or half rings, garlic, and then put pieces of liver on top. Then the pan should be placed in an oven heated to 200 ° C and left until the potatoes are ready (on average, 40-50 minutes). If you wish, you can sprinkle the dish on top with grated cheese (regular, hard, or Parmesan) about 10-15 minutes before cooking, but this is not necessary.
Decorate the finished dish with herbs. Dill and cilantro are best suited to the liver. Of the alcoholic drinks, light lager beer works best with baked liver, but it is best to enjoy the dish without additional alcohol.
