Cheesecake is a delicate, light and very airy curd cake that has many fans. At first glance, it may seem that it is difficult to cook, but if you act strictly in accordance with the recipe, then the cooking process will only bring pleasure.

- - 80 ml whipping cream;

- - 240 ml sour cream;
- - 30 g of sugar;
- - half a teaspoon of vanilla extract.
Instructions
Step 1
Grind the cookies into crumbs, mix with sugar and fill with melted butter. Stir until smooth.
Step 2
Lubricate the detachable form (23 cm in diameter) with oil, lay out the base and tamp it.

Put curd cheese, flour and sugar in a bowl, beat with a mixer for a minute.

Add eggs one at a time, beat the cream for 20 minutes each time.

Finally, add the cream, lemon zest and vanilla extract to the bowl, beat the cream for 1 minute.

We spread the cream on the base and distribute it evenly.

Put the cheesecake mold on a baking sheet and put it in the oven (175 ° C) for 15 minutes. Reduce the temperature to 120 ° C and bake the cheesecake for another 1.5 hours.

We take out the cake pan (do not turn off the oven) and very carefully with a sharp knife we pass along the side of the mold so that the cake does not deform during the cooling process.

In a cup, mix sour cream, sugar and vanilla extract, distribute evenly over the cake and return to the oven for 15 minutes.
