One of the reasons is that store-bought liver is often dryish. It's not about the recipe - that's how it was originally. But this problem can be dealt with by making liver fritters, which, when the "right" ingredients are added, will not be dry for sure. This is a dish that is invariably loved by both children and adults. It can be offered for lunch or dinner, or, with certain simple "manipulations", it can decorate the festive table.

Step 1

Decide which liver you want to use for the pancakes. The best option is beef liver, unlike pork liver, it does not taste bitter, and differs from chicken liver in more "strong" minced meat. Of course, this is just a recommendation. If you wish, you can buy any, the main thing is that it is not repeatedly frozen and thawed, almost certainly nothing good will come of such a liver. In the store, pay attention to the structure of the offal. If ducts are visually visible, it is better to choose a different package. Another important thing to pay attention to is the date of production. This is especially important for unfrozen liver, which has a fairly short period of implementation. Frozen - without loss of quality it is stored much longer, but even here it is impossible to buy after the expiration date. A store that disregards sanitary rules and sells goods in an inadequate condition is, by and large, untrustworthy.

Step 2

Dissect the liver and cut out the bile ducts with a sharp knife. So it is less likely that you will cut a lot. Then proceed to remove the film. To do this, feel its edge and, gently pushing your finger under it, as if moving it towards the center. In this way, it is still much easier to remove the film from the liver than with a knife. The film is usually not removed from chicken, duck, turkey offal.

Step 3

Cut the liver into relatively small pieces that can easily fit into the neck of your meat grinder. Lay them in small batches, otherwise there is a risk of splashing the walls or window. Still, the liver is not meat, the minced meat from it turns out to be much thinner. Alternate the laying of offal and onions - of course, it can later be chopped, fried and added to the minced meat. But many people like it better when liver pancakes are absolutely homogeneous, for them the onion slices are not the best option. Season with minced meat and season with black pepper.

Step 4

Prepare the rest of the ingredients for the liver pancakes - mayonnaise, eggs, flour. When choosing mayonnaise, do not try to severely limit its fat content. The idea of reducing fat intake is understandable and welcome, but mayonnaise is not the product that will help with this. Just think about how (if not due to vegetable oil) it has its structure. The answer is obvious - due to emulsifiers, that is, certain chemical reagents that bind water. Unfortunately, no matter what admonitions about the natural naturalness of the product are disseminated by manufacturers, all this is nothing more than a marketing ploy. Either fat, or an artificial emulsifier, there is no third for the purchased mayonnaise.

Step 5

Mix 1 kg of minced liver with 50 g of mayonnaise, beat in 2 eggs, put 30 g of wheat flour. For supporters of a healthy diet, flour can be replaced with bran - wheat or oat, rye bran is not suitable. Their taste does not go well with the taste of liver fritters. Mix the mixture well, it should be homogeneous. Let it stand for a while - 10-15 minutes is enough. At this time, the flour will swell and become a kind of binding agent, which, in tandem with the emulsifying properties of eggs and mayonnaise, will allow the crumpet mince to acquire the correct texture.

Step 6

Heat the skillet. You can take cast iron, or aluminum with a non-stick coating. The main thing is that it is perfectly clean. Any product will begin to stick to a dirty frying pan immediately, after which it will burn and give the dish a completely inappropriate taste. Pour in vegetable oil, heat it until a slight white smoke is emitted. Take the minced liver with a spoon and put it in the boiling fat. Fry the pancakes for 2-3 minutes on each side, then transfer to a bowl, covering with a towel and a lid to keep warm. By the way, they are also very tasty when cooled down, you can eat them just like that, or you can put them on a sandwich.

Step 7

For the holiday, make a liver cake. For 300 g of curd cheese (or soft curd), take 150 g of pickled cucumbers, 30 g each of fresh parsley and dill, 4 boiled eggs. Mix the ingredients with a fork (or with a low speed blender - we don't need gruel, though). Another filling option is for 400 g of baked eggplant, chopped in mashed potatoes, 100 g of walnuts, peeled and chopped into rather large pieces. The third - 250 g of processed cheese, 100 g of mayonnaise and 30 g of garlic, mixed into a homogeneous mass. (The weight of the ingredients is indicated for 1 kg of prepared minced liver meat.) You do not need to do everything at once, one cake - one filling and please do not forget to salt.

Step 8

When assembling the cake, start by choosing the dish or plate where you plan to build the "structure". We need dishes with very low rims, or better, no rims at all. In the absence of such, you can collect and serve the cake on a round or square cutting board. Do not worry that ugly empty places will be visible - we will certainly decorate them with slices of lemon, herbs, olives, olives, capers, carrot roses - but you never know where fantasy will bring. Put the liver pancakes in one row, then coat with the filling, the last layer should be the filling. If you wish, you can coat the cake with mayonnaise and sprinkle with cheese shavings - then it will look somewhat like a Napoleon. But you can leave it "as is", sprinkle with herbs or, as recommended just above, decorate with vegetables that suit your taste. A cake made from liver pancakes must be kept in the refrigerator before serving.
