    • 100 grams of wheat flour;
    • 400 grams of chicken liver;
    • 100 milliliters of vegetable oil;
    • 2 eggs;
    • 1 teaspoon salt
    • or
    • 1, 5 tablespoons of flour;
    • 300 grams of beef liver;
    • 1 large onion;
    • 1 egg;
    • 50-75 milliliters of vegetable oil;
    • salt and black pepper to taste;
    • fresh parsley and dill.

Instructions

Step 1

Cooking chicken liver pancakes. Rinse the chicken liver under cold water, remove all films and streaks, then pass it through a meat grinder or grind it in a blender. Add to the resulting mass two chicken eggs, 100 grams of wheat flour and a teaspoon of salt, mix everything thoroughly.

Step 2

Preheat a skillet with 100 ml of vegetable oil (it is better to use unscented oil) and put a tablespoon of pancakes on it. Fry them over medium or low heat on both sides until tender. Serve with potato, rice or buckwheat garnishes, or hot pasta, garnished with a sprig of fresh herbs.

Step 3

Cooking beef liver, rinse under cold water, remove films and streaks, then pass through a meat grinder or finely chop with a kitchen knife. The film will easily come off if the liver is first scalded with boiling water. Take 3-4 sprigs of parsley and dill each, rinse and pat dry with a paper towel. Cut off all thick branches and chop. Peel one large onion and chop finely.

Step 4

Toss the twisted beef liver, chopped onion, one egg, chopped greens and 1.5 tablespoons of flour, salt and pepper the liver mass to taste. If you want the pancakes to turn out fluffy, add 3-4 tablespoons of any mineral water. Preheat a frying pan with about 50-70 milligrams of vegetable oil and fry the pancakes on it, on each side you need to fry no more than 2-3 minutes, if you cook longer, they turn out to be dry and tough. Serve ready-made beef pancakes with garnish (same as for chicken pancakes) immediately after cooking, top with white sauce if desired and sprinkle with chopped fresh herbs.
