It is necessary

    • For agar-agar marmalade:
    • 10 g sugar;
    • 100 ml orange juice (canned
    • unsweetened);
    • 200 ml of water;
    • 5 g agar agar
    • 140 g of pureed currants with sugar.

Instructions

Step 1

Agar agar is used in place of gelatin. It has no smell or taste, and thanks to its antibacterial properties, it contributes to a longer storage of dishes in which it is present. Agar-agar is usually sold in powder (less often in flakes or plates).

Step 2

Dissolve agar powder in a warm liquid (water, broth, fruit juice) in a ratio of about one teaspoon to a glass of liquid and leave for fifteen minutes to swell. Then put the agar liquid on the fire and, stirring constantly, bring to a boil. When it dissolves completely, remove the liquid from the heat, add the necessary additives and cool the dish at room temperature.

Step 3

As the gelling properties of agar agar vary, test it in practice to determine the correct proportion. To do this, before cooling the entire mixture, scoop a teaspoon of liquid and place in the freezer for half a minute. If the mixture quickly froze, it means that the proportion is chosen correctly. You can safely cool the entire dish. If not, dissolve a little more powder in a little water and pour into the total mass.

Step 4

Any known recipe can be used to make agar agar jelly. Please note that agar-agar will require two to three times less than gelatin.

Step 5

Fruit jelly with agar-agar. Dissolve agar agar in warm water and leave to swell for ten minutes. Dissolve currants grated with sugar with hot water and add juice. Put on fire and bring to a boil. Pour in water with agar-agar and boil for five minutes over low heat. Then pour into molds, cool and place in the refrigerator. After complete solidification, remove the resulting gummies from the molds, roll each in sugar or coconut.
