- - 2 kg of pork (neck) with skin;
- - 1 bunch of parsley;
- - 2 cloves of garlic;
- - 1 tsp rosemary;
- - 1 tsp thyme;
- - 2 tbsp. ghee;
- - 250 ml of water;
- - 250 ml of beer;
- - 3 sage leaves;
- - salt, pepper (to taste).
Instructions
Step 1
Process pork and rinse with cold water, wipe off moisture with a paper towel. It is necessary to make a longitudinal cut in the meat with a knife.
Step 2
Rinse the greens, dry them, separate the leaves from the stems and chop finely. Peel and grate the garlic. Combine greens with garlic, stuff the resulting mass into a cut in the meat. Close the incision, wrap the meat with threads.
Step 3
Heat the oven to 180 degrees. Make longitudinal and transverse cuts on the skin with a knife. Roll the meat in a mixture of salt, pepper and dried herbs.
Step 4
Heat the oil in a frying pan and fry the meat until golden brown, on all sides. Then add beer and water to the meat, put the pan in the oven for a couple of hours. During cooking, it is sometimes necessary to spray the meat with the resulting juice.
Step 5
Half an hour before the end of frying, spread the meat with hot saline solution - this will make the crust especially crispy.
Step 6
Remove the meat from the pan. Strain the broth obtained during frying, bring to a boil, salt and pepper. Cut the meat into portions, after having cleaned it from the threads. Serve the sauce separately.
