Juicy vegetables, aroma of herbs and garlic combined with tender fish fillets will impress even those who prefer meat dishes. Fish on a vegetable pillow is a fragrant and surprisingly tasty dish.
It is necessary
- For 2 servings of fish:
- 2 medium-sized sea fish (sea bass, mackerel, sea bass);
- 1 medium fresh tomato;
- 4 sprigs of parsley;
- 4 cloves of garlic;
- Ground coriander on the tip of a knife;
- Ground black pepper;
- Salt;
- Vegetable oil.
- For the vegetable pillow:
- Celery root;
- 2 carrots;
- horseradish root.
Instructions
Step 1
Peel carrots, horseradish and celery roots. Cut everything into small pieces. Grease the dish in which the fish will be baked with a little vegetable oil. Put the pieces of vegetables in a form in an even layer. The fish pillow is ready.
Step 2
Gut the fish thoroughly, remove scales and rinse. On each side of the fish carcass, make transverse cuts approximately at a distance of 1.5 cm from each other. Dip the tomato in boiling water for one minute, then take it out and rinse it with running cold water. After that, you can carefully remove the skin from it and chop finely. Season the chopped tomato with coriander and black pepper. Put the tomato mass in the fish belly, and a pile of parsley sprigs.
Step 3
Season the stuffed fish with salt, pepper and lay on a vegetable pillow. Peel the garlic and cut into thin slices. Sprinkle the fish with garlic on top. Pour vegetable oil over the fish (one tablespoon is enough for one fish). Bake fish on a pillow at 1800C for 40 minutes.
