The pike perch is rightfully called the "royal fish". Tasty, dense pike perch meat is dietary, as it does not contain fat. Juicy and tender pike perch turns out if you cook it on a vegetable "pillow". Such a dish is quite suitable for a dinner party - it will delight guests and leave an unforgettable experience.

- - pike perch carcass (approximately 1 kg)
- - carrots - 2 pcs. average size
- - leeks -1 stalk
- - onions - 1-2 medium-sized onions
- - vegetable oil - 4 - 5 tablespoons
- - salt, pepper, seasonings to taste

Instructions
Step 1
We clean the pike perch carcass from scales. Cut off the fins, tail, remove the gills and offal. We cut the carcass to the ridge into portioned pieces. We do not cut the ridge - the fish should look like a whole. Lubricate the fish from all sides and from the inside with vegetable oil, salt - and leave to soak for 30 minutes. Cut the onion into rings, chop the carrots into cubes, cut the leeks.
Step 2
We turn on the oven. We cover the baking sheet with parchment for baking or food foil. Lay out in layers: chopped onions, then carrots, on top - leek. Salt, pour over with vegetable oil (about 2-3 tablespoons). This is a vegetable fish roasting pad.
Step 3
Put a pike perch carcass on a vegetable pillow, add a little warm water to a baking sheet, cover the dish with foil on top, trying to make the "cocoon" of foil as airtight as possible. We put a baking sheet with fish in an oven preheated to 190 degrees for 30-35 minutes.
Step 4
We take out the baking sheet, remove the foil, squeeze a little mayonnaise onto the fish carcass, spread it, sprinkle it with water - and send it back to the oven for another 10 minutes to bake it open.
Step 5
The pike perch is ready. It is served along with the vegetables on which it was baked. Insert thin slices of lemon or cucumber, parsley sprigs into the cuts on the back. For beauty, you can scatter red berries over the dish - for example, currants, or cranberries.
