- • 0.5 kg (shoulder or neck) pork;
- • deep fat oil;
- • 30 g soy sauce;
- • 20 g fresh ginger;
- • 10 g vodka;
- • a mixture of peppers and salt;

Step 1
Rinse in running water and dry the meat with napkins. Make shallow cuts on all sides. Coat the meat with a mixture of pepper and salt, trying to coat the inside of the cuts as well.

Heat deep fat over high heat. Turning gradually, fry the meat on all sides to get a crust.

Place the fried meat in a saucepan. Top up with water or broth, so as to completely cover the meat. After boiling, add vodka, soy sauce and chopped ginger. Simmer over low heat until the meat is tender.
