Jerusalem artichoke contains a huge amount of vitamins, beneficial acids, salts and minerals. It contains only 73 kilocalories, while proteins are only 2 g, fats - 0.01 g and carbohydrates - about 15 g. That is why it has a significant value for those who adhere to proper nutrition.

Rules for the use of Jerusalem artichoke

Before use, the Jerusalem artichoke root should be rinsed as thoroughly as possible in water (you can even use a brush to remove dirt particles). The skin of the root vegetable is very thin, so it should not be cut off, it is only necessary to remove both ends of the tuber, roots and damaged areas.

Jerusalem artichoke can be consumed both raw and processed. The untreated root tastes like a cabbage stump, and if boiled, it tastes like potatoes. By the way, in its raw form, the product can cause flatulence, in addition, one must take into account the fact that, like all plants, it is not suitable for all people, and in some it can even cause an allergic reaction. Therefore, it should be eaten carefully, checking your body for compatibility with this plant.

You can also use the earthen pear in cooking, adding to all kinds of sauces and dough. For example, make everyone's favorite delicacy - pancakes. To do this, take:

- 2, 5 cups of root vegetables (peeled and grated on a fine grater);

- a little soda;

- 400 g flour;

- 200 g of any fermented milk product;

- a little salt.

Mix all components together to the desired consistency. Pancakes are prepared as usual - in a hot oiled frying pan.
