Soup is an essential part of the diet. There are a lot of recipes for this dish. And here is one of them - cold salmon soup with leeks.
It is necessary
- - salmon fillet - 250 g;
- - potatoes - 2 pcs;
- - cream with a fat content of 20% - 250 ml;
- - dry white wine - 100 ml;
- - celery - 1 petiole;
- - leeks - 1 stalk;
- - water - 1, 2 l;
- - onions - 1 head;
- - bay leaf - 1 pc;
- - pepper;
- - salt;
- - butter - 30 g.
Instructions
Step 1
So the first thing to do is rinse the salmon fillet well and cut it into pieces.
Step 2
Pour water into a saucepan, add salt and boil. Then put the chopped salmon fillet into boiling water, and also pour white wine into the same container, add pepper and bay leaf. Bring to a boil and simmer for another 10 minutes over low heat. After the time has elapsed, remove the pan from the heat, remove the fish, and strain the broth.
Step 3
Now you need to wash and chop the celery and leeks. Remember that only the white part of the leek should be cut off. Peel the onions and potatoes and cut into cubes.
Step 4
Melt the butter in a skillet and sauté the following ingredients: onions, leeks, and celery. After 5 minutes, add the potatoes and fry for another 2 minutes. Put the resulting fry in a saucepan, then pour the salmon broth into it. Cook the soup for about half an hour.
Step 5
After the soup is cooked, refrigerate and blend until puree with a blender.
Step 6
From the blender, pour the soup back into the pot and add the cream. Then refrigerate the dish for 2 hours. Cold salmon soup with leeks is ready!
