It is necessary

- - 300 g fresh salmon;
- - 2 stalks of celery;
- - 2 medium sized potatoes;
- - 150 ml of cream;
- - 120 ml of dry white wine;
- - the head of an onion;

- - 1 bay leaf;
- - 50 g butter.

Step 1
Prepare fish broth. To do this, pour water into a saucepan, add wine and salt a little. Place the salmon slices, black pepper and bay leaves in the same place. Bring to a boil, skim off and cook over medium heat for 10 minutes. Then remove the fish and strain the broth.

Meanwhile, peel the potatoes and onions and cut them into small cubes. And finely chop the celery stalk and fry in a separate saucepan in butter, making a slow fire.

Add potatoes to the celery and fry for 5 minutes. Then pour in the fish broth and cook, covered for about half an hour.

Chill the finished soup and turn into a smooth, tender mass using a blender. Add cream, whisk again and refrigerate for an hour. After the allotted time, pour the soup into bowls, garnish with herbs and salmon slices.
