Cold cucumber soup is a popular dish in many cuisines of the world. The most famous type of such a stew is the famous white Spanish gazpacho, but similar recipes can be found in the "cookbooks" of the British, French, Greeks and many other nations.
White gazpacho with cucumbers
Gazpacho is a famous Spanish soup, which, as a rule, is prepared on the basis of tomatoes and is therefore colored in red tones. However, there are many recipes for white gazpacho, no less traditional. Garlic, white bread, almonds, cauliflower and, very often, cucumbers are used for its production. Try to make this soup by taking:
- 2 long-fruited cucumbers;
- 2 cloves of garlic;
- 300 ml of chicken broth;
- 100 grams of sour cream;
- 100 grams of thick yogurt;
- 3 tablespoons of sherry vinegar;
- salt and freshly ground white pepper;
- 3 green onion feathers.
Peel the cucumbers using a vegetable peeler. Cut vegetables in half lengthwise and remove seeds. Cut the cucumbers into small cubes, peel the garlic and pass it through a press. Place the cucumbers and garlic in a blender bowl, pour in half of the broth and puree until smooth. Add sour cream, yogurt, vinegar and leftover broth and season with salt and pepper. Stir, cover and refrigerate for an hour. Serve sprinkled with chopped green onions.
Greek cold cucumber soup
The cucumber soup prepared according to the Greek recipe is delicious and refreshing. You will need:
- 2 long-fruited cucumbers;
- 200 ml of vegetable broth;
- 400 ml thick Greek yogurt;
- 2 tablespoons of chopped dill greens;
- 2 tablespoons of chopped parsley;
- 2 tablespoons of chopped mint greens;
- 3 tablespoons of lemon juice;
- salt.
Peel and cut the cucumbers into small cubes. Combine yogurt and vegetable broth, pour into blender bowl, add cucumbers and herbs and puree. Season with lemon juice and salt. Refrigerate and serve.
Korean Cucumber Soup
Asian soups attract many with their unusual taste for European dishes. Try making cucumber soup the way it is made in Korea. Take:
- 3 short-fruited cucumbers;
- 1 teaspoon of chopped chili;
- ¼ cup of apple cider vinegar;
- 1 tablespoon of granulated sugar;
- 2 tablespoons of soy sauce;
- 1 tablespoon of sesame oil;
- 4 cups of filtered water;
- 2 teaspoons of sesame seeds;
- ice cubes.
Cut the cucumbers into strips. Combine with pepper, vinegar, sugar, soy sauce, and sesame oil. Leave it on for 10-15 minutes for the vegetables to juice. Pour in water and refrigerate for 20-30 minutes. Add sesame seeds and ice before serving.
