In the summer heat, you always want to drink a lot, but you want to eat light and cold. Among the recipes for the first courses there is a wonderful summer soup made from tomatoes and cucumbers, it perfectly diversifies the menu and will delight you in the hot season.
It is necessary
- - 1 liter of tomato juice;
- - 2 pcs. red sweet pepper;
- - 4 things. sweet tomatoes;
- - 4 things. medium cucumber;
- - 4 things. a clove of garlic;
- - 20 ml of olive oil;
- - 20 ml of wine vinegar;
- - 3 g of red ground pepper;
- - 3 g of black ground pepper;
- - salt to taste.
Instructions
Step 1
Take fresh green cucumbers, rinse them well in cold water, dry them and peel them with a sharp knife. Cut each cucumber in half. If there are large seeds inside, remove them. Small seeds can be left. Cut the cucumbers into small pieces.
Step 2
Wash the pepper in warm water and dry. Remove the stem from the pepper. Cut the peppercorns into halves and remove the seeds and partitions. Rinse the peppers in water again, dry and cut into small pieces.
Step 3
Wash the tomatoes in cold running water. Remove leaves and stalks if necessary. Remove the top from the tomatoes and cut the tomatoes into thin slices.
Step 4
Take a large blender cup and grind the tomatoes in it. Add pepper and cucumber to chopped tomatoes. Wash, peel and chop the onion and garlic. Add them to vegetables in a blender. Whisk everything. Add tomato juice and olive oil, wine vinegar to vegetables, salt and pepper. Whisk again until the mixture is smooth. Pour into a tureen and refrigerate for a couple of hours. Serve garnished with herbs or croutons.
