Horseradish has been considered medicinal for a long time. Its leaves contain ascorbic acid, B vitamins, as well as other substances useful for human life. Eating horseradish in food is the prevention of colds.
Horseradish canning
Horseradish leaves can be pickled for the winter, adding later as a seasoning for a pungent taste.
There are several ways to marinate horseradish leaves:
1. Rinse the leaves, dry in a dark place, chop into large pieces. Next, put into the jar in layers: salt, leaves, salt, and so on. It is advisable to put everything in a sterile jar in dense layers so that you get something like a brine.
2. These greens can be used as a seasoning for other dishes that need to be salted or pickled for later use in the winter. For example, the famous sauce called "Horseradish", for which there are many recipes. Here is one of them:
Cooking requires:
- tomatoes 1-1.5 kg;
- garlic to taste (3-5 pieces);
- 150-300 g of horseradish leaves;
- salt and sugar, to taste.
The garlic needs to be peeled. Rinse horseradish leaves thoroughly. Wash the tomatoes well and remove the stalk. Scroll everything through a meat grinder.
Before chopping horseradish leaves, you must put a plastic bag on the neck of the meat grinder so that your eyes do not get irritated, just like when you chop onions.
After chopping all ingredients, mix well and add sugar and salt to taste.
For a richer taste, place the "horseradish" in the refrigerator for a day. Then you need to pull out and close the jars prepared for twisting.
Preparing cans
When the "crap" is infused, you can begin to sterilize the jars. To do this, fill a small saucepan halfway with water, bring to a boil and place a sieve on top. While the water is boiling, it is necessary to rinse the jars and put one washed on a sieve upside down. After a couple of minutes, remove and put on a clean towel. Prepare the following jars for spinning as well.
Other ways to harvest horseradish leaves
Drying. It is necessary to thoroughly rinse the horseradish leaves and place in a well-ventilated, but dark room, until completely dry. After this procedure, the plant must be crushed and stored in a closed jar. You can also dry the leaves on a battery or in a slightly heated oven. In addition to cans, horseradish can be stored in handfuls in gauze.
Fresh storage. Place the leaves in a wet plastic bag, close tightly and refrigerate. In this form, the plant is stored for about six months.
Freezing. Rinse the leaves, let the water dry, close tightly in a bag or container, put in the freezer.
