Pea soup is a delicious first course prepared with pork or beef broth. Due to the high amount of proteins and carbohydrates contained in the main ingredients, this soup is very satisfying and nutritious.

It is necessary

    • water - 5 l;
    • smoked pork ribs - 500 g;
    • peas - 1 glass;
    • onion - 1 pc;
    • carrots - 1 pc;
    • potatoes - 300 gr;
    • vegetable oil - 3 tbsp. l;
    • parsley;
    • salt and black pepper to taste;
    • allspice - 3 peas;
    • bay leaf - 1 pc.

Step 1

Choose peas. For real pea soup, get split peas. It tastes no different from the whole one, but it cooks much faster, which will significantly save cooking time.

Step 2

Prepare the main ingredient. Go through the peas, ridding them of any debris or low-quality peas. Then fill it with water and rinse it thoroughly with your hands, changing the water several times. Then soak the peas in a little water for an hour.

Step 3

Boil the broth. Pour the ribs with cold water and put on fire. As soon as the water begins to boil and foam forms, be sure to carefully remove it, otherwise the broth will turn out to be unappetizing.

Step 4

Make a roast. While the broth is cooking, peel the onions, carrots and finely chop them. Heat a frying pan, pour some refined sunflower oil into it and add the vegetables. Then reduce heat on the stove and sauté the chopped vegetables until golden brown. Then place them on a plate, separating them from excess oil.

Step 5

Cook the soup. Remove the cooked ribs from the broth and place them on a plate to cool slightly. Add the peas to the broth, and after 20 minutes add the peeled and diced potatoes. After the potatoes are relatively soft, salt the broth to taste and add the vegetables you fried earlier.

Step 6

Separate the ribs from the bones and cut into small pieces. When the soup is almost done, add the meat to it.

Step 7

Season the finished pea soup, add 2-3 allspice peas and lower the bay leaf for a few minutes. Season with finely chopped parsley and cover. After 10 minutes, during which the soup is infused and becomes even tastier, it can be served.
