Many peoples of the world consider pea-based soup as their national dish. And our country is no exception. Pea soup is loved and cooked quite often in most families. If you also want to learn how to cook this simple and tasty dish, then we suggest considering the classic cooking method using beef.
It is necessary
- - a piece of beef with a bone (you can take a brisket) - 400 g;
- - whole or split peas - 250 g;
- - potatoes - 4 pcs.;
- - onions - 1 pc.;
- - carrots - 1 pc.;
- - tomato paste - 1 tbsp. l. (optional);
- - ground black pepper;
- - salt;
- - Bay leaf;
- - sunflower oil - 2 tbsp. l.;
- - water - 3 l;
- - fresh dill or parsley;
- - pan Pan.
Instructions
Step 1
Rinse the meat in cold tap water and place it in a saucepan. In this case, if desired, a whole piece can be pre-cut into several parts. Fill a saucepan with 3 liters of water and bring to a boil. After that, remove the foam to make the broth clearer. Then reduce the temperature to a low setting, cover and cook for 2 hours.
Step 2
50 minutes before the end of the beef boiling time, pour the peas into a bowl and rinse under running water 5-6 times until the water becomes clear. Then transfer it to a saucepan with the meat and bring to a boil again. Then cover and cook until the end of the allotted time at the lowest temperature.
Step 3
When half an hour remains, peel all vegetables - potatoes, onions and carrots. Cut the potatoes into cubes, the onions into quarters, and the carrots into small pieces. Immediately put the potatoes in a saucepan along with 2-3 laurel leaves, and you can make a fry from onions and carrots.
Step 4
Pour sunflower oil into a frying pan and heat it. Then add the onions and carrots and fry them until golden brown, sprinkle with a few pinches of ground black pepper. If you like a tomato-flavored stir-fry, add a spoonful of tomato paste and cook for 2-3 minutes. Once you're done, transfer the resulting fry to the soup. Now you can salt it. Put salt in the ratio of 1 teaspoon of salt to 1 liter of water.
Step 5
Remove the finished pea beef soup from the stove and leave for 10 minutes to infuse slightly. And then it can be poured into portions, in each of which you can put a piece of meat. Serve the dish to the table, sprinkle with fresh chopped herbs, along with croutons or garlic donuts, as well as a vegetable salad.
