Many people like pea soup with shank due to its delicate taste, practicality and ease of preparation. This very nutritious first course is especially popular during the cold season - it's so nice to eat a plate of aromatic warming soup on a frosty evening!
The pea soup contains all the nutrients and vitamins that are in the peas themselves. First of all, it is vitamin E, group B, as well as vitamin C, which is indispensable for strengthening the immune system. This complex of vitamins normalizes metabolism, effectively fights depression, and has a good effect on various cardiovascular diseases. Despite the high calorie content of pea soup with shank, it is recommended to include it on the menu more often in order to replenish the body's reserves of fats, proteins and carbohydrates.
According to this recipe, a classic pea soup with shank is obtained - fragrant, rich, very satisfying. It is quite simple to prepare it, you just need to have at your disposal a few free hours and the necessary ingredients:
- 1 raw pork shank;
- 1 cup dry peas;
- 3 potatoes, 2 carrots, 2 onions;
- 1 parsley root;
- 2 bay leaves;
- fresh herbs, any spices.
You should not fry vegetables in vegetable oil for this soup. The pork is already very fatty, in the pea soup, oil will be superfluous.
To make pea soup, you first need to prepare all the products: rinse dry peas thoroughly, cover with cold water, leave to soak. Put the pork knuckle in a saucepan, fill it with water, put it on fire. Add a whole carrot, parsley root to the shank, bring to a boil, leave to simmer over medium heat for 2 hours.
Then carefully remove the shank from the pan, cool, separate the meat from the bone. Remove the roots from the broth, throw the peas into it. Peel potatoes, chop into wedges, carrots and onions into small cubes. Add vegetables to the pot when the peas are almost cooked. Reduce heat, bring to a boil.
At the end of cooking, season the soup with meat pieces, pepper and salt, add bay leaf. Serve the soup hot, sprinkle each serving with chopped fresh herbs on top.
The soup can also be cooked from smoked shank. Only for this version of pea soup, it is better not to use different spices, since the shank itself is very fragrant. To prepare such a soup, you will need a traditional set of products:
- 1 small boiled and smoked shank;
- 1 glass of peas;
- 3 potatoes, carrot, onion;
- pepper, salt.
Soak the soup peas ahead of time to cook them faster. Rinse the shank, put in a saucepan, cover with water, immediately add peas there and cook the broth for about 1 hour.
You can vary the degree of softness of the peas at your discretion - someone likes it when it is very boiled, and someone likes it to be dense.
Prepare vegetables: rinse and peel potatoes with carrots and onions. Cut the potatoes into cubes, carrots into semicircles, chop the onions finely.
After an hour, remove the meat from the pan, put the carrots and onions in the broth, bring to a boil and add the chopped potatoes. Cut the meat into pieces and add to the soup 5 minutes before the end of the pea soup. Season the soup with pepper and soup and serve hot.
