If you are a fan of pureed soups, then you should definitely try this one too. I suggest making a sweet pepper puree soup.
It is necessary
- - sweet green peppers - 4 pcs;
- - sweet red pepper - 1 pc;
- - sweet yellow pepper - 1 pc;
- - large potatoes - 2 pcs;
- - large onion - 1 pc;
- - vegetable broth - 1 l;
- - a sprig of basil;
- - salt.
Instructions
Step 1
The oven must be preheated to a temperature of 100 degrees. While it is warming up, rinse the green peppers thoroughly, place on a baking sheet and pour over with vegetable oil. Then you need to send them to the oven and bake until the peel begins to burst, that is, for 20 minutes. Cover the finished peppers with cling film and leave in this form for a quarter of an hour. After the time has elapsed, remove their cracked peel and cut into pieces, after removing the core.
Step 2
Wash and peel vegetables such as potatoes and onions. Then cut the first into cubes, and the second into half rings. Fry the onions in a pan for 4 minutes, then transfer them to a saucepan and combine with vegetable broth. Bring the mixture to a boil, add the potatoes and cook for another 20 minutes.
Step 3
Then add the baked green peppers to the vegetable broth. Remove the soup from heat and let cool.
Step 4
After the soup has cooled, grind it with a blender. As a result, a homogeneous mass should be obtained, which must be boiled again.
Step 5
In the meantime, while the soup is cooking, rinse and chop the rest of the peppers. Remove the core before slicing them into half rings. Place the peppers in a skillet and fry for 4 minutes. Separate the basil leaves from the twigs, add to the peppers and cook for another minute.
Step 6
Sweet pepper puree soup is ready! Serve it to the table, sprinkle with basil and fried half rings of colored peppers.
