Cheese sauce is great with pasta, vegetable and meat dishes. The sauce is versatile, but it cooks quickly enough. However, you can vary the types of cheese and make sauces with different flavors.
It is necessary
- - butter (25 g);
- - wheat flour (2-3 tbsp. L.);
- - dry mustard (3 g);
- –Salt and black pepper to taste;
- –Milk (270 ml);
- –Fresh dill to taste;
- - hard cheese (260 g).
Instructions
Step 1
A thick-walled metal saucepan is best for making cheese sauce. First you need to put butter in a saucepan and gradually melt over low heat. Use low fat butter as the sauce is high in calories.
Step 2
Next, gently add wheat flour in small portions and stir constantly with a wooden spatula. Then add dry mustard and cook for 2-3 minutes. The color of the mixture should not be too dark. Make sure that the flour is not too browned. Otherwise, the taste of the sauce will change.
Step 3
Pour milk into a saucepan, not forgetting to stir the mixture so that no lumps form and the sauce turns out to be a homogeneous consistency. Cook until thickened for another 2 minutes, then put finely grated cheese in the sauce. Season with salt and pepper to taste. Rinse the dill thoroughly under running water, cut into small pieces and place in the sauce. Stir again.
Step 4
Pour hot sauce over pasta, meat or vegetables. Do not forget that this sauce is best used only hot or warm, as the sauce will harden when it cools. That is, the cheese sauce is prepared just before serving.
