A cucumber sandwich is a light, nutritious breakfast or a refreshing snack throughout the day. Like many British dishes, these double sandwiches are easy to prepare and incredibly delicious. Of course, they should be served with good aromatic tea.
It is necessary
- For the cucumber and cheese sandwiches:
- - 10 slices of wheat toast bread;
- - 1 large salad cucumber (without seeds);
- - 200 g mascarpone cheese;
- - 20 g of mint;
- - 40 ml of soy sauce;
- - 1 tbsp. sesame seeds;
- - salt;
- For sandwiches in English:
- - 8 rectangular slices of grain or rye bread;
- - 1 cucumber;
- - 125 g salted butter;
- - 1 tsp grated or dried orange peel;
- - 2-3 sprigs of dill;
- For the cucumber and egg sandwiches:
- - 6 slices of white or bran bread;
- - 1 cucumber;
- - 3 boiled eggs;
- - 3 tbsp. mayonnaise;
- - 15 g watercress;
- For the mini cucumber sandwiches:
- - 10 slices of white loaf;
- - 1 small cucumber;
- - 80 g of butter;
- - 30 ml of apple cider vinegar and vegetable oil;
- - 1/2 tsp freshly ground black pepper.
Instructions
Step 1
Cucumber and cheese sandwiches
Wash the cucumber, pat dry with a towel and cut off the “butts” on both sides. Slice the oblong vegetable across into thin slices. Place them in a deep bowl, drizzle with soy sauce, sprinkle with sesame seeds, stir gently by hand and leave to marinate for 10 minutes.
Step 2
Chop the mint leaves finely. Mash the mascarpone with a fork, mix with prepared herbs, salt to taste and mix well until a smooth paste is obtained.
Step 3
Cut off the tough bread crusts to get regular pieces. Spread them with cheese, put cucumber slices overlapping half of them. Finish off the sandwiches by covering the vegetables with the remaining rectangles of bread. Press down lightly on the double sandwiches and cut them diagonally into equal triangles.
Step 4
English cucumber sandwiches
Remove the butter from the refrigerator ahead of time to soften it. Add dried or grated orange zest, chopped dill and stir well. Spread this mixture evenly over each piece of bread and spread evenly with a knife.
Step 5
Place an equal number of half-circles of cucumber on four spread slices and cover with the other four so that the edges are perfectly aligned and the finished sandwiches are beautiful. Serve them like this or cut them into pieces.
Step 6
Homemade cucumber and egg sandwiches
Peel the eggs and chop with a knife or mash with a fork. Grease pieces of loaf with a thin layer of mayonnaise, pour the rest of the sauce to the egg mass and mix thoroughly.
Step 7
Place slices of fresh cucumber on 1/2 part of the bread, then spread the egg paste evenly. Chop the watercress and sprinkle on the sandwiches. Make sandwiches.
Step 8
Mini sandwiches with cucumber
Cut the cucumber into thick slices. Combine vegetable oil, apple cider vinegar, freshly ground black pepper in a small cup and whisk. Transfer the vegetable slices there and hold it there for a few minutes.
Step 9
Roll out the slices of the loaf with a rolling pin for thinning, cut from each of two circles of the same diameter with the cucumber. Apply butter to them all over. Place the bread discs together with the spread sides, placing a piece of cucumber inside, shaking off the marinade beforehand so that the sandwiches are not too wet.
